- 1/2 cup peanut butter (crunchy or creamy-your choice)
- 1 red bell pepper, chopped
- 1 large onion, chopped
- 1 tablespoon ground cumin
- 1/4 cup lime juice
- 1/4 cup soy sauce
- 1/2 cup chicken broth
- 2 cups cooked white rice for serving, if desired

Yay! I'm so glad that you and your husband enjoyed your dinner, and I'm glad that it was easy to put together.
